Homemade Turtle Candy – Rich Chocolate, Buttery Caramel, and Crunchy Pecans
Homemade Turtle Candy is a timeless confection that combines three irresistible flavors into one unforgettable bite. Each piece features crunchy toasted pecans topped with soft, buttery caramel and coated in a rich layer of smooth chocolate. The contrast between the crisp nuts, chewy caramel, and creamy chocolate creates a luxurious candy that’s perfect for holidays, special occasions, homemade gifts, or simply satisfying your sweet tooth. Once you make these at home, you’ll never want to buy store-bought versions again.
One of the reasons Homemade Turtle Candy is so popular is because every ingredient shines. Toasting the pecans brings out their rich, nutty flavor, while homemade caramel offers a deep buttery sweetness that’s impossible to replicate with packaged candies. Finished with premium chocolate and a sprinkle of flaky sea salt, each turtle candy has the perfect balance of sweetness, richness, and crunch. Although candy making may seem intimidating, this recipe is surprisingly straightforward when you follow each step carefully.
Whether you’re preparing holiday gift boxes, dessert platters, party treats, or homemade edible gifts, Homemade Turtle Candy is guaranteed to impress. These elegant chocolates look beautiful, store well, and make thoughtful homemade presents for friends and family. Best of all, they’re easy to customize with different chocolates, nuts, or flavorings, allowing you to create your own signature version of this classic candy.
Ingredients:
For the Caramel
1 cup granulated sugar.
½ cup unsalted butter, cubed.
½ cup heavy cream, warmed.
¼ cup light corn syrup.
1 teaspoon vanilla extract.
½ teaspoon flaky sea salt.
For the Turtle Base
1½ cups whole pecan halves, toasted.
For the Chocolate Coating
12 ounces high-quality semi-sweet or dark chocolate, finely chopped.
1 teaspoon coconut oil (optional).
Extra flaky sea salt for garnish (optional).
Instructions:
Step 1
Preheat your oven to 350°F (175°C). Spread the pecan halves onto a baking tray and toast them for 6 to 8 minutes until fragrant, then allow them to cool completely.
Step 2
Line a baking tray or large plate with parchment paper. Arrange the toasted pecans into small clusters of 3 to 5 halves, leaving space between each cluster.
Step 3
In a heavy-bottomed saucepan, combine the granulated sugar, light corn syrup, and ¼ cup water over medium heat. Stir only until the sugar dissolves.
Step 4
Allow the mixture to cook without stirring until it reaches a deep amber color or about 300°F (150°C), gently swirling the pan occasionally if needed.
Step 5
Reduce the heat to low and carefully whisk in the cubed butter until completely melted.
Step 6
Slowly pour in the warmed heavy cream while whisking continuously. Cook the caramel until it reaches 245°F (118°C), then remove it from the heat and stir in the vanilla extract and flaky sea salt.
Step 7
Working quickly, spoon a generous amount of caramel onto the center of each pecan cluster, allowing it to spread naturally over the nuts.
