Instructions:
Step 1
Line an 8×8-inch or 9×9-inch baking pan with parchment paper. Leave a little overhang on the sides to make lifting the bars out easier after chilling.
Step 2
Place the chocolate chips, butterscotch chips, and peanut butter into a medium saucepan. Heat over low heat while stirring continuously until the mixture becomes completely smooth.
Step 3
Remove the saucepan from the heat and stir in the pinch of salt. Mix well to evenly distribute the flavor throughout the chocolate mixture.
Step 4
Add the Rice Krispies cereal or crushed cornflakes to the melted chocolate mixture. Gently fold everything together until every piece is evenly coated.
Step 5
Fold in the mini marshmallows and chopped peanuts if using. Stir carefully to keep the cereal crunchy and avoid crushing it.
Step 6
Transfer the mixture into the prepared baking pan. Spread it evenly using a spatula or the back of a spoon.
Step 7
Press the mixture down gently to create an even layer without packing it too tightly. This helps keep the bars light and crunchy.
Step 8
Place the pan in the refrigerator and chill for 2 to 3 hours until the bars are completely firm. Avoid cutting them before they have fully set.
Step 9
Lift the chilled mixture out of the pan using the parchment paper. Place it on a cutting board for easier slicing.
Step 10
Cut into squares or rectangles using a sharp knife and serve immediately. Store any leftovers in an airtight container to keep them fresh.
Tips and Variations:
Use High-Quality Chocolate
Good-quality chocolate melts more smoothly and gives the bars a richer flavor with a better texture.
Don’t Overheat the Chocolate
Melt the chocolate mixture slowly over low heat while stirring to prevent it from becoming thick or grainy.
Add More Crunch
Mix in crushed pretzels, toasted nuts, or extra crispy cereal for even more texture in every bite.
Try Different Nut Butters
Replace the peanut butter with almond butter, cashew butter, or sunflower seed butter for a delicious variation.
Make It Extra Decadent
Drizzle melted white chocolate or dark chocolate over the chilled bars before slicing for a beautiful finish.
Holiday Version
Decorate the tops with colorful sprinkles, crushed candy canes, or festive chocolates to match any celebration.
Storage
Store the bars in an airtight container in the refrigerator for up to 1 week to keep them firm and fresh.
Freeze for Later
Wrap the bars individually or place them in a freezer-safe container with parchment paper between each layer and freeze for up to 2 months. Allow them to sit at room temperature for a few minutes before serving for the best texture.
