Instructions:
Step 1
Preheat your oven to 350°F (175°C). Grease and lightly flour two 8-inch or 9-inch round cake pans or one 9×13-inch baking pan.
Step 2
Add the cake mix, eggs, vegetable oil, orange juice, and drained mandarin oranges to a large mixing bowl. Mix on low speed until everything is combined.
Step 3
Increase the mixer to medium speed and beat the batter for about 2 minutes. The batter should become smooth while still containing small pieces of mandarin oranges.
Step 4
Divide the batter evenly between the prepared cake pans or pour it into the baking dish. Smooth the surface with a spatula.
Step 5
Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Avoid opening the oven too early to help the cake rise evenly.
Step 6
Remove the cakes from the oven and allow them to cool in the pans for about 10 minutes. Transfer them to a wire rack and let them cool completely before frosting.
Step 7
In a large bowl, combine the undrained crushed pineapple and instant vanilla pudding mix. Stir until the pudding begins to thicken slightly.
Step 8
Gently fold the whipped topping into the pineapple mixture until fully combined. Mix just until smooth to keep the frosting light and fluffy.
Step 9
If making a layer cake, place one cake layer onto a serving plate and spread a generous amount of frosting over the top. Add the second cake layer and cover the top and sides with the remaining frosting.
Step 10
If using a 9×13-inch cake, spread the frosting evenly over the cooled cake. Smooth the surface with a spatula for an even finish.
Step 11
Decorate the top with extra mandarin orange slices, shredded coconut, chopped pecans, or orange zest if desired. These toppings add both flavor and a beautiful presentation.
Step 12
Refrigerate the cake for at least 2 hours before serving. Slice and enjoy the cake chilled for the best flavor and texture.
Tips and Variations:
Use Fresh Mandarin Segments
Fresh mandarin oranges can be used instead of canned for a brighter citrus flavor and a fresher homemade taste.
Don’t Skip the Chilling Time
Refrigerating the cake for several hours allows the frosting to firm up and gives the citrus and pineapple flavors time to blend together beautifully.
Make It Tropical
Add shredded coconut, diced pineapple, or chopped mango to the frosting for an even more refreshing tropical twist.
Add a Crunchy Finish
Sprinkle toasted pecans, walnuts, or sliced almonds over the top just before serving to add a delicious contrast to the soft cake.
Boost the Citrus Flavor
Mix a little orange zest into both the cake batter and frosting for a stronger citrus aroma and a more vibrant flavor.
Create Individual Servings
Bake the batter as cupcakes and top each one with the pineapple frosting for portable desserts that are perfect for parties and picnics.
Storage
Keep the cake covered in the refrigerator for up to 4 days. The chilled frosting stays creamy while the cake remains wonderfully moist.
Make Ahead
Prepare the cake a day before serving and store it in the refrigerator overnight. The extra resting time allows the flavors to develop, making the cake even more delicious the next day.
