Ingredients

Crust:

1 box graham crackers (about 27), finely crushed

1/2 cup light brown sugar

1 cup salted butter, melted

Filling:

2 cups heavy whipping cream

3 packages (8 oz each) cream cheese, room temperature

1/2 cup sugar

1/4 cup sour cream

2 tablespoons powdered sugar

2 tablespoons cornstarch (or extra powdered sugar)

2 teaspoons lemon juice

1/2 tablespoon vanilla extract

Instructions

Step 1

Mix the crushed graham crackers, brown sugar, and melted butter until fully combined.

Step 2

Press half of the mixture into a 9-inch springform pan, packing it tightly. Freeze to set and keep the remaining crumbs aside.

Step 3

Whip the heavy cream on medium-high speed for 2 minutes. Add powdered sugar or cornstarch, then continue whipping until stiff peaks form.

Step 4

In another bowl, beat the cream cheese and sugar until smooth and creamy.

Step 5

Add sour cream, vanilla, lemon juice, and remaining powdered sugar. Mix until light and fluffy.

Step 6

Gently fold in the whipped cream in two parts until well combined.

Step 7

Pour the filling over the chilled crust and smooth it out, pressing lightly to remove air pockets.

Sprinkle the remaining crumbs on top and press them gently to form a compact layer.

Cover with parchment paper, press firmly, wrap well, and refrigerate for at least 8 hours (overnight preferred).
